A bean chilli is a staple meal in our house. The recipe changes every time, my only rule is I HAVE to have all the extras. A chilli without cheese or avocado isn’t a chilli worth having, right?



Ingredients

  • Onion

  • Red pepper

  • 3 garlic cloves

  • 1 tsp smoked paprika

  • 1 tsp cayenne pepper

  • 1 tsp cumin

  • 1 tsp mild chilli powder

  • 1 tin of chopped tomatoes

  • 1 tsp tomato purée

  • 100ml water

  • Squeeze of Heinz tomato ketchup

  • 1tsp sugar or 1 piece dark chocolate

  • 1 stock cube

  • 2 tins of beans of your choice

  • Spicy Mexican cheese

  • 1 avodado

  • Salsa

  • Spinach

  • Corriander


Method


  • Fry an onion, red pepper and 3 garlic cloves in oil until soft

  • Add 1tsp each of smoked paprika, cayenne pepper, cumin and mild chilli powder and fry till fragrant

  • Add 1 tin of chopped tomatoes, 1tbsp tomato purée and 100ml water and bring to a simmer

  • Add a squeeze of @heinz_uk tomato ketchup (secret ingredient) 1 tsp sugar (or 1 piece dark chocolate if u have it) and a stock cube then season to taste

  • Add two tins of beans, I did lentils and black beans

  • Served with spicy Mexican cheese, avo, salsa, spinach and coriander


Meet Rosa

@woodhillkichen began in June 2020 after deciding I could not take one more picture of my food to sit on my camera roll unseen by the world. Be it home-cooked or eating out, there’s nothing I find more satisfying than good food and getting the perfect pic!


Despite still working through lockdown, quieter weekends gave me the chance to experiment with new recipes and spend a little more time in the @woodhillkichen.


Proving vegetables don’t need to be boring and that cake is ALWAYS a good idea is my goal and I hope to encourage people to love their leftovers, shop small and support local businesses!
