When espresso folklore gives you rules to follow to allow you to create the perfect drink, it would be silly to deviate from them, right? So just in case, you’re not aware of the infamous 4 M’s we thought we would let you into the perfect espresso-making secret…..
First of all, we have Macchina, the espresso machine and we have the perfect solution to this first M with our range of La Pavoni coffee machines and we would definitely recommend the lever pull options. Why?
Well, these machines are generally more consistent in the experienced operators hands than their automatic counterparts relying on pure mechanical function in a tried and tested form, drawing an exact volume of water into the piston chamber and pre-infusion defined by the operator to best suit the coffee, consistent pressure only passing out through the ground coffee and a ramping down of pressure during extraction limiting the opportunity for over-extraction during the pour.

We then have the Macinazione, the proper grinding of beans –a uniform grind between fine and powdery– which is ideally done moments before brewing the espresso with an on-demand grinder.
Miscela is next, the coffee blend and the roast, and of course we here at Dancing Goat Coffee have an abundance of beans and blends for you to choose from!
Finally, we have Mano, the skilled hand of the barista because even with the finest beans and the most advanced equipment, the shot depends on the touch and style of the barista. When combined properly, these four Ms create a drink that is at once bold and elegant, with a light, sweet foam crema floating over the coffee.
