Chicken and apple hedgehog rolls

If you think you can create other animals out of the bread dough, go ahead and experiment. The combination of chicken and apple will certainly be appreciated.

INGREDIENTS


500g of wholemeal bread mix

4 chicken breasts

1 cucumber

2 red apples

40ml of olive oil

2 pinches of salt

2 pinches of pepper

METHOD


Follow the instructions on the wholemeal bread mix to make 8-12 bread rolls, allowing the dough to prove as per the mix instructions

  • 500g of wholemeal bread mix


Meanwhile, prepare the filling. Season and cook the chicken breasts under the grill until golden brown and cooked through. Remove and allow to cool

4 chicken breasts

1 pinch of salt

1 pinch of pepper


Once cool, shred or slice the chicken into thin strips. Use the large side of a grater to prepare strips of cucumber and apple

  • 1 cucumber

  • 2 red apples


Add the strips of chicken, cucumber and apple to a bowl. Season with salt and pepper and drizzle with a small amount of olive oil, set aside

To make a hedgehog, roll the bread into the shape of a hedgehog and use two small bits of dough to create eyes. Cut spikes using a pair of scissors


To create a mouse, mould the dough into a mouse shape and use a little piece of the dough to create the eyes. Cut two ears using a pair of scissors


Heat the oven to 200˚C/gas mark 6 and cook the rolls for 10–15 minutes or until golden brown - a hollow sound should be produced when you tap the base


Slice the rolls in half and fill with the chicken, cucumber and apple salad. The rolls will keep in an airtight container for up 3 days, but are best served fresh.
